Suil Sparkling Viognier (Disgorged 09/2022)

100% Early Pick Viognier - No Dosage - Method Champenoise.

Delicate floral notes peep through on the nose and palate, perpetuating the subtle characteristics of pear and minerality. Brisk acidity and flavors of lemon and jalapeno add a piquant note on the finish.

Suil translated means Hope. Our founder Dennis Horton always referred to Viognier as Virginia's Hope for the future. Our sparkling is a true labor hope, love and tenacity. we perform each step of the traditional methode champenoise by hand from riddling, disgorging, corking to labeling. This intensive process finishes with each bottle being inspected before the final corking.

No Dosage - green apple, bone dry crisp acidic finish pairs well with fatty foods - try it with a ribeye, truffle mashed potatoes and asparagus or buttered popcorn with Old Bay seasoning.
