Mascarpone Cream Stuffed Pastry Shell with Fresh Fruit and Spiced Red Wine Reduction
Ingredients - Pastries & Fruit
12 Frozen Puff Pastries (Prepare as instructed on box, remove middle and set aside)
Fresh Fruit - Rinse blue berries, blackberries, raspberries and strawberries – quarter strawberries. Mix together and set aside
Ingredients - Mascarpone Cream
2 cups of whipping cream
1/2 tsp of vanilla
16 oz Mascarpone
2 limes
Ingredients - Red Wine Reduction
2 cups of wine
1 cup of water
1 cup of brown sugar
6 Anise Stars
Small handful of whole cloves
5 cinnamon sticks
1/2 tsp of nutmeg
1/2 tsp of cardamom
1/8 tsp ground ginger
Instructions
Whip Cream with 1/2 tsp of vanilla once whipped place in refrigerator to keep cool. Zest 2 limes into a bowl and squeeze for the juice. Mix mascarpone with lime zest and juice. Once mixed fold in whip cream. To infuse more flavor let the mascarpone cream refrigerate overnight.
Place all remaining ingredients into a medium sauce pan stir and place over medium high heat. Bring to a boil then reduce heat to low and simmer for 20 minutes. Stir occasionally, once mixture is reduced by approximately half remove from heat. Once cooled pour through a fine metal colander to remove whole spices. To assemble scoop or pipe mascarpone cream into prepared pastry shells, top with fruit mixture and drizzle red wine reduction.
